Leicestershire Handmade Cheese Company is located in Upton, a small hamlet in the South West Leicestershire countryside on a working dairy farm called Sparkenhoe Farm. David and Jo Clarke are dairy farmers whose families have farmed in the area for generations. David manages the 150 head of pedigree Holstein Friesian cows and the 160 followers.

In its subtlety, Red Leicester ends up being an intriguing cheese. Sparkenhoe, made by David and Jo Clarke, is England's only unpasteurised Red Leicester cheese. It's the first to be produced on Sparkenhoe Farm since 1875. The cheese is creamy and mellow, with a slightly flakey texture.

2018-02-21 · Red Leicester was first produced by George Chapman in 1745 on the Sparkenhoe farm. Mr. Chapman stopped production in 1875. During World War II food rationing had been implemented with cheese production switched large centralized creameries. Food color was banned during the war. Post war the ban was lifted but production of Leicester was halted.
